VINIFICATION

At Château des Annereaux, each vintage is unique, and we adapt our practices to reveal its character while preserving the identity of our terroir. Our winemaking relies on careful observation and gentle extraction, essential to maintaining the purity of the fruit and the finesse of the tannins. Merlot, our leading grape variety, is renowned for its elegance and suppleness and plays a central role in our wines, bringing roundness, finesse, and aromatic depth.

We favour a measured, precise approach — without any systematic intervention — to craft wines that are elegant, silky, and balanced, where every decision is guided by the pursuit of harmony and excellence.

Ageing

We use a carefully considered balance of barrels — 25% renewed each year — and a large 50-hl wooden vat. This vessel allows for subtle maturation, maintaining harmony between fruit and structure. Over a 12-month ageing period, the wines gain finesse, silkiness, and depth while preserving the authentic expression of Merlot and our other varieties.
